How to Cook

Soak Vanpayar in water for 4–6 hours or overnight for faster cooking. For Vanpayar Curry, pressure-cook the soaked beans with turmeric and salt, then simmer in a coconut-based gravy with shallots, green chilli, and curry leaves. For Mezhukkupuratti, cook until just tender and stir-fry with coconut oil, shallots, dried red chilli, and curry leaves until lightly coated and fragrant. For Erissery, cook with raw banana or yam and finish with a roasted coconut tempering.

Storage: Store in an airtight container in a cool, dry place away from moisture.
